Cantharellus cibarius is the best known species of the genus Cantharellus. The mushrooms are collected in the Baltic states by Pharmeko, and supplies it to the food industry.
The chanterelle is a small edible mushroom of the Agaricaceae family that grows in groups in spruce and hardwoods forests. Along with boletes, it is one of the most popular culinary product from the woods.
It adapts well to any preparation, the ideal to enhance its flavor is to cut it and cook with parsley and oil. It lends itself to the preparations with other mushrooms although in smaller amounts because its flavour is stronger than that of the other species. In some countries chanterelle are even preferred to the penny bun type(Boletus edulis).
Its scent is fruity, while the flesh is pretty thick, whitish or yellowish. The color varies, depending on the rainfall and humidity of the habitat in which it grows.
